Ingredients

  • 2 Tbsp butter
  • 2 Tbsp minced garlic
  • 3 pounds boneless, skinless chicken thighs
  • 1 Tbsp Italian seasoning
  • 1 tsp kosher salt
  • ½ tsp cayenne pepper
  • 1 cup chicken broth
  • 2-4 Tbsp cornstarch
  • 4 tablespoons water, for the cornstarch slurry

Directions

  1. Melt the butter using Sauté and cook the garlic for 30 seconds, then turn Sauté off. Add chicken, seasonings, and broth.

  2. Seal and cook on High Pressure for 15 minutes for whole thighs or 5 minutes for thigh chunks. Allow 10 minutes of natural release before venting the remainder.

  3. Remove the chicken. Mix 2–4 tablespoons cornstarch with 4 tablespoons water and stir into the simmering sauce using Sauté until thickened. Spoon over the chicken.

  4. Slow-cooker alternative: cook the chicken, butter, seasonings, and broth on Low for 4–6 hours. Add the slurry, then cook uncovered on High 20–30 minutes to thicken.
