A coconut custard pie that makes its own crust.

Ingredients — one pie

  • 1/2 stick butter, melted
  • 1 3/4 cups sugar
  • 4 eggs
  • 1/2 cup flour
  • 2 cups milk
  • 1 cup coconut
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

Directions

  1. Heat the oven to 350°F and grease or spray a large pie pan.
  2. Mix the melted butter, sugar, and eggs well.
  3. Add the flour, milk, coconut, vanilla, and salt. Mix thoroughly.
  4. Pour into the prepared pan and bake for 45 minutes to 1 hour, until the edges are set and the center has a small custard-like jiggle rather than liquid batter.
  5. Let the pie cool before slicing so the custard and self-forming bottom layer can set.

Double batch — two pies

  • 1 stick butter, melted
  • 3 1/2 cups sugar
  • 8 eggs
  • 1 cup flour
  • 4 cups milk
  • 2 cups coconut
  • 2 teaspoons vanilla
  • 1 teaspoon salt

Use the same method and divide the batter between two greased pie pans. Start checking at 45 minutes. The bottom is a soft, self-forming layer rather than a flaky pastry crust.
