Ingredients

Crust

  • 1 1/4 cups all-purpose flour, plus more for dusting
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon salt
  • 1 stick cold unsalted butter, cut into 1/2-inch cubes
  • 1 tablespoon apple cider vinegar
  • 1/4 cup ice water, plus more if needed

Crumb topping

  • 1 cup all-purpose flour
  • 1/3 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature

Apple filling

  • 3 pounds mixed apples (such as Golden Delicious, Granny Smith and Gala), peeled and sliced 1/4 inch thick
  • 4 tablespoons unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt

Directions

  1. Mix the crust flour, sugar, and salt. Rub in the cold butter, then add vinegar and ice water until the dough holds together. Form a disc and chill at least 1 hour.

  2. Roll a 13-inch circle, fit into a 9-inch pie plate, trim and crimp, then chill at least another hour.

  3. Mix the topping dry ingredients and rub in its butter to form crumbs; freeze while preparing the filling. Toss the sliced apples with the filling ingredients.

  4. Heat a foil-lined baking sheet on the lowest oven rack at 400°F. Fill the chilled shell and add the crumbs. Bake on the hot sheet 30 minutes, then reduce to 350°F for 60–80 minutes, until the apples are tender. Cover a darkening top loosely with foil. Cool completely.
